Homemade Aburi Sushi Recipe

Aburi sushi is a flame seared sashimi on top of Japanese rice. It is a very popular style of sushi and makes a great dinner for family and friends. Super easy and fun to make homemade aburi sushi!

What Is Aburi Sushi?

Aburi sushi is a flame seared style sushi. Sashimi is typically used as the topping which would be the part that is seared. Searing the top of the sushi gives a slight smoky taste and enhanced texture to it.

Is Aburi Sushi Torched?

Yes, to make aburi sushi you would need a food torch. The torch would give the sushi a nice sear on the top.

What Sauce Goes On Aburi Sushi?

In this recipe, we used teriyaki sauce and sesame sauce on the aburi sushi. It adds extra flavor to it and gives it a nice golden sear when you torch it. Another sauce that you can use is Japanese mayo (Kewpie mayo).

Is It Hard To Make Aburi Sushi?

It is not difficult at all to make homemade aburi sushi and it is very similar to making regular sushi. To make aburi sushi, all you need is a food torch and give it a nice finish touch.

Sushi

  • Japanese Rice
  • Salmon and/or Tuna Sashimi
  • Rice Vingar

Sauce

  • Teriyaki Sauce
  • Sesame Sauce
  • Japanese Mayo (Optional)

Condiments

  • Wasabi
  • Soy Sauce

Where To Buy Aburi Sushi Ingredients?

  • Sashimi – If you are in Vancouver, BC, you can get sashimi at Fujiya. Fujiya is a Japanese store and this is where we usually go to get our sashimi. Other places that sells sashimi are Fresh Idea Starts Here and T&T Supermarket. If you are not from Vancouver, check out your local Japanese store.
  • Teriyaki Sauce – We also bought this from Fujiya.
  • Other ingredients – You can typically get them at your local Japanese or Asian supermarket.

How To Make Aburi Sushi

  1. Cook the rice. While the rice is cooking, start cutting the sashimi into thin slices.
  2. Once rice is done cooking, open the lid of the rice cooker or pot and let it cool down for 5 minutes. Start adding the rice vinegar slowly into the rice and mix well. Add rice vinegar until the rice has a bit of the vinegar taste. Continue to let the rice cool down until you can touch the rice without burning your hands.
  3. Dip your hands in a bowl of warm water and grab a small portion of the rice and start forming the rice into a shape of the nigiri rice using your palm and fingers. Dip your hands in the bowl of warm water whenever the rice starts sticking to your hand.
  4. Place the sashimi on top of the rice and pat it down.
  5. Mix teriyaki sauce and sesame sauce in a small bowl and brush sauce on sashimi.
  6. Torch the aburi sushi with the food torch.

Tips On Making Aburi Sushi

  • Cut the sashimi at an angle (about 45 degrees) so the sashimi would cover the rice nicely on top. Cutting a piece of sashimi straight would not place nicely on the rice.
  • Having a bowl of warm water to dip your hands before shaping the rice can come really handy. When your hands are dry, the rice will stick to your hand and would be harder to shape. So it is important to keep your hands wet so the rice doesn’t stick to you. When the rice starts to stick to your hand, simply dip your hands in the water!
  • If you want your aburi sushi to be more flavorful, we suggest you to brush the sashimi a few times so there is more sauce on it!
  • When you are torching the aburi sushi, you will notice that oil can get on the table and chairs. If you do not want the oil to get on your clothes, wear an apron.

Instructions

  • Place the sashimi on top of the rice and pat it down. Optional – You can add some wasabi between the rice and sashimi to give the aburi a bit of heat.
  • Mix teriyaki sauce and sesame sauce in a small bowl. Taste test to your liking.
  • Use a brush or back of a spoon to brush the sauce on to the sashimi. Optional – add mayo on top of the sashimi.
  • Torch the aburi sushi with the food torch.
